Pollock graduated from the Ontario College of Art and Design in 1954 and subsequently studied art in London, England. He is perhaps best known as a protean empresario in the Toronto art scene in the second half of the twentieth century. In addition to his artistic production, his gallery, The Pollock Gallery, introduced Canadians to the likes of David Hockney and Willem de Kooning.
While teaching art in the 1960s in Northern Ontario, Pollock developed what would become a lifelong friendship with Norval Morrisseau. Morrisseau's first solo exhibition was held in the Pollock Gallery in 1962 and met with great success. An accomplished artist in his own right, Pollock's work has been acquired by the National Gallery of Canada.
